La Paulée by Constance Hotels and Resorts, a one-of-a-kind event with world famous winemakers


Constance Hotels and Resorts is renowned in Mauritius for its finesse and the high quality of the services offered. Oenology is a field mastered by the hotel group which is committed to the training of its team, seeking perfection. This is why Constance Hotels and Resorts is hosting and celebrating the second edition of La Paulée: a traditional gastronomic banquet gathering wine connoisseurs, winemakers, chefs and sommeliers to celebrate the end of the harvest in Burgundy, France.

Gastronomy is at the heart of the delicacies featured by the group’s hotels such as Constance Belle Mare Plage with his restaurant Blue Penny Cellar and Prince Maurice with the Archipelago restaurant. Constance Hotels and Resorts’ wine cellar hosts bottles coming from more than 1300 vineyards. Constance’s chefs are good at overturning the rules by for instance, proposing red wine with fish or white wine with red meat for example. Clients are very fond of wine tasting which they consider as a real leisure. Culinary experts and sommeliers must therefore master their art to perfection.

For the second consecutive year, Constance Hotels and Resorts hosts La Paulée. This event, which took place from April 24th to 27th, brought together 3 renowned guest winemakers: Jacky Barthelmé of Domaine Albert Mann in France, Christian Ress of Domaine Balthasar Ress in Germany and Olivier Rivière of Domaine Olivier Rivière in Spain.The latter has met Constance’s team to enhance their knowledge of wine by narrating to them the history of their respective vineyards and teaching them a couple of oenological techniques.

Communication, exchange and sharing were at the centre of this great encounter which turned as a real opportunity for Constance’s sommeliers who made the best of this pleasant ‘training session’. To close the event, chefs from Constance have prepared a number of pairing dinners featuring products coming from these great European winemakers. This edition was closed on Saturday 29 April with the great La Paulée event at Constance Le Prince Maurice where guests will discover all the great wines of these vineyards.
