After a successful Master Class on cheese, Institut Escoffier Mauritius has launched a Master Class on chocolate led by the Chef Éric Lecerf, chocolate tutor, at Eureka from the 16th to the 18th of November. Luxury Mauritius was there and has brought, other than chocolates, a taste of the Master Class!
A unique culinary expertise
Integrated in 2014, Institut Escoffier in Mauritius has become one of the leading companies in hotel industry trainings. The Institut provides technical expertise to professionals of the industry but also to amateurs. Chocolate as its best with Chef ÉRIC LECERF
During the three-day session, the Institut welcomed two talented Chefs for “Les Éclats du Chocolat”. The ten-year experience pastry and chocolate-making Chef, Éric Lecerf, was assisted by Pierrick Macé, the starred chef who has worked with major houses and has been the personal Chef of former French President François Mitterrand. Éric is a great lover of chocolate – this velvety product made of cocoa, with its charming flavour, slowly becoming a luxury product. The chocolate tutor works with famous brands like Michel Cluizel, Cacao Barry, Belcolade and Valrhona, one of the finest! Between mixing chocolate with different aromas, production techniques, culinary designs and artistic creativity, the professionals can later share their expertise with others around them.
