What is “La Paulée”?
While the word “paulée” refers to a French festival in Bourgogne which celebrates the end of the harvest, Constance Hotels & Resorts took inspiration from it to create this wonderful even … In line with the values of the group, it aims at helping its sommeliers to enrich their expertise in the field of wines, and progress towards excellence. This annual meeting has become a real reference for wine lovers. La Paulée by Constance Hotels & Resorts brings together well-known personalities of the fine gastronomy to lead workshops and carry practical training for actors of the wine sector.

In the sumptuous decor of Constance Prince Maurice and Constance Belle Mare hotels, many passionate connoisseurs have happily shared their knowledge. This year, the oenological week of La Paulée has welcomed five renowned winemakers from Europe: Egon Müller from Germany; René Barbier from Clos Mogador in Spain; Megan Parnell from the Domain of the Gods in Hermanus, South Africa; Elonora Gottardi from Contrà Soarda in Italy, and Jean-Dominique Vacheron from Domaine Vacheron in France.

Art of cheese: a new insightful training
Guests have heartily discovered a new lesson this year: the art of cheese-making. During this tasty workshop, the Belgian cheese-maker Frederic Van Tricht has shared his know-how with enthusiasm and passion.
