Bernard Loiseau Festival 2019 : a 14th edition full of flavours

Once again, with passionate and tasteful enthusiasm, Constance Hotels & Resorts group has organised the Bernard Loiseau Culinary Festival. The 14th edition of this annual meeting was held from 17th to 21st of March, at Constance Belle Mare Plage and Constance Prince Maurice. Like every year, six Michelin-starred Chefs paired up with six “Chefs of Constance” to live delicious experiences… On the agenda: wine tasting, pastry, mixology, and many more mouth-watering adventures!

On Sunday, out to the market

Once the kickoff was given last Sunday and the pairs drawn by lot, everyone zealously begun the competition. First step: visiting the Flacq market and a shop for local products which they chose with care to concoct their dishes during the contest.

On Monday, wine tasting

The customary and yet iconic contest of wine-tasting has evaluated its contestants on five criteria: presentation and service of champagne as per the best practice; demonstration of their olfactory knowledge on ten spirits; proposal of harmonious assortments of food and wine; viticultural knowledge, and sensory evaluation of a red wine and a white wine.

On Tuesday, the table was set

The service and table art skills of the contestants were assessed. They were required to showcase their talents of table dressing, reception and speech… Under the attentive but helping eye of the jury.

On Wednesday, pastry and mixology

The competition took a sweet note on Wednesday with the ornamental cake, the St Honoré, the chocolate dessert, and the macaroons which the pastry chefs were challenged to bake.

On Thursday, a well-seasoned competition

Time for the final culinary test, capstone of the Bernard Loiseau Festival. The star Chefs and their partners presented three dishes, prepared from the products imposed – a starter with  organic salmon, and a dish made from organic bream fish. Creativity, originality and know-how were all present with these authentic Mauritian products.

On Friday, a coffee break

The “Café Gourmand” challenge by Nespresso has been a real trip around the world. The baristas have concocted beautiful caffeinated chef-d’œuvres with the well-known brand Nespresso. As the latter offers several aromas from around the world, a tasty trip was proposed to  the jury’s taste buds.

On Saturday,  the awards ceremony

After a whole week’s suspense, the festival ended with the announcement of the winners along with the awards ceremony.

The duo Sasha Dinoo of Constance Prince Maurice, and Sascha Kemmerer, 1 Michelin star Austrian Chef, won the hearts of the jury for the culinary competition! Sasha, after four previous attempts, is the first woman to win this competition.

This concluded the 14th edition of the Bernard Loiseau Festival, with a week full of emotions and adventures.
