An unconventional venue mixing cosmopolitanism and Mauritian products

PRIME is unquestionably the place-to-be! There, secret ingredients have been mustered to bring forward a fresh identity. Very cosmopolitan in its approach, though as Mauritian as it can be, the restaurant perfectly unveils the mixed influences of One&Only Le Saint Géran. As from your first steps in this peculiar steakhouse, you will part of different historical moments. The limestone floor, first of all, is a testimony of French history as it comes from a 16th century chapel. A drastic change of scenery for this seafront restaurant which has undergone a complete transformation for its re-opening last January!

Today, it showcases an ultra-modern, butchery-inspired decor and a brand-new water courtyard seating area, embracing its wild Mauritian setting on Pointe de Flacq peninsula. The modern airy restaurant also features soft leather seats, Arabescato Carrara marble tops, dramatic open windows, and softly glowing lanterns. You feel at the same time in Mauritius while living up to the traditions of faraway lands which glorify the sense of taste and luxury…

Following any traditional steakhouse habits, the finest cuts Angus and Wagyu beef are served… But PRIME also celebrates farm-to-fork cuisine, fresh local seafood and seasonal produce such as heart of palm, or curcuma, the source of turmeric. Vikash Coonjan drives his inspiration from his vivid and fond childhood memories of helping his mother in her kitchen. As he treasures the experience of cooking with seasonal local produce when at its best, he hence brings that passion and skill to PRIME, drawing on his Mauritian roots to curate incredible new dishes for guests. As for the impressive wine cellar with rare vintages from all over the world, it provides the perfect complement to any dish, with a focus on sustainable wines.
