For several years, the five-star hotel Constance Prince Maurice has had the honor to welcome Miss World 2003, Rosanna Davison. Also an international nutritionist, Rosanna Davison has, this year, collaborated with the Executive Chef of the hotel, Michael Scioli, to develop a range of seasonal healthy menus. Luxury Mauritius has had the pleasure to participate in this culinary exchange on the 25th September at the Constance Prince Maurice!
In 2012, the Irish nutritionist transitioned from a vegetarian to a vegan diet to prepare for a triathlon, the Galway Ironman, which consists of a semi-marathon, a 90-km bike ride and a 1.9-km swim. The new healthy diet, as she explains, gave her the energy she needed to run this challenging race. After her studies in Naturopathic Nutrition and Biochemistry, she released, in February 2015, her first cooking book, one of her two best-sellers “Eat Yourself Beautiful”, following a publishing agreement signed by Gill Books.
Rosanna Davison knew how to appeal to the discerning palates of the Mauritian guests present at the culinary exchange in the heart of the Chef’s gardens, in Poste de Flacq. Rosanna has inspired the hotel group in the creation of new menus using her two best-sellers cooking books and her own recipes.
During the culinary exchange, the chef Michael Scioli pointed out that he has been collaborating for a year with Rosanna Davison to create a healthy lifestyle that favours taste, the nutritional value of the meal and anaesthetic appeal. He added,
We wanted to focus on the key elements of our culinary creations. Thus, we have been inspired by Rosanna’s recipes, and we have revisited some of our dishes already present in our menus. We are now offering 80 of her recipes from which we have developed additional new dishes.
As for Rosanna Davison, also known as the daughter of the singer Chris de Burg, internationally-known for his single Lady in Red, she explains that her approach aims at encouraging the consumption of more vegetables as well as colorful and fresh food, and at reducing the intake of processed food.
I have therefore worked with the Chef of Constance to propose a new healthy menu which is of a high nutritional value and low in calories.
These new menus are now available at the restaurants, spas and wellness centers of the hotel group Constance Hotels and Resorts in Mauritius as well as in the Seychelles and the Maldives. Each menu is tailored to fit the supply of fresh local products available in each region and island.
